As I was making my egg bites, I thought “ohh this could be good with pancake batter.” So I tried it. It needs some minor changes, but I would make them again!
Preheat the oven to 350. I made one cup of pancake mix per the box instructions. I added some vanilla, cinnamon and nutmeg to the batter. I pour it into my greased mini muffin tin. I only filled them up about half way. The batter only made about 18 bites; it did not fill the whole pan. I added cut breakfast sausage links, cooked bacon pieces and ham to them. I then baked for about 10 minutes, until they were golden brown.
I ate them with some syrup. It could have been the protein mix that I used, but they were not sweet enough for me. I think next time I want to add syrup in the batter before baking. The sausage links were my favorite. If I use bacon again, it needs to be more and thicker cut. The ham was okay- but I don’t think will make use that again.
