My summer hours for worked have kicked in, so I will be looking at more meal prep and easy meals ideas! First up, breakfast burritos!
I had roasted potatoes left over. To them I added chopped red onions, tomatoes, breakfast sausage links and chopped cooked bacon. It sautéed everything together in a pan with salt, pepper, garlic powder, chili powder and some elote seasoning. After a few minutes, I added two eggs to scramble all together. I finished it off with some fresh squeezed lime juice. Next was to prepped the wrapping of burritos. To my flour tortilla, I added some shredded cheddar cheese. Then my scramble mixture and topped it with some cilantro lime sauce, sour cream and some salsa. I rolled it up tightly with some more cheddar at the end. I then browned both sides of the burrito. The cheese added at the end was used to help seal it shut.
This made about 4 burritos and I decided to not freeze any. Each morning I would do a quick 30 seconds in the microwave. Followed by a minute or so on each side in the pan to re-crisp the burrito. I cut it in half and wrapped it up in wax paper and foil. They traveled well for grab and go as well as stayed pretty warm and cheesy if I at it at work. I think if I prep more next time, I will freeze some to have it on hand for some grab and go breakfasts. Instead of wax paper, I would wrap it in a wet paper towel and then foil and place in a Ziploc bag to freeze. Then when you want to reheat, remove the foil and give a quick zap in the microwave. If you wish to re-crisp then do a quick pan fry or toast in the toaster oven.
