Elote Potato Salad

You know Elote/Mexican street corn is one of my favorite ways to eat corn. Last corn season I tried out a few different recipes. This time was an elote potato salad. It was soooo delicious, that I cannot wait to make it again.

First, I soft boiled a small bag of baby red potatoes. While they were boiling, I chopped red onion, poblano peppers, green onions and cilantro. I then cut grilled corn off the cob. I added all to a large bowl. When the potatoes were ready, I chopped them and added them to the bowl. In a small dish I created a dressing with 2 parts sour cream, 1 part mayo, then salt, pepper, chili powder and lime juice. I combined all together tasted it and seasoned as needed. I poured the dressing over all the ingredients and mixed until well combined. I let the salad sit overnight ( I think it absorbed all the good flavors better waiting). It was the perfect warm day side dish and also paired so nicely with other BBQ/grilled items. I have a feeling I will be making it again in the near future!
