I was looking for healthier lunch options and decided on a Mediterranean inspired bowl.
In a bowl I added a can of chickpeas that I drained. Then tossed in EVOO, salt, pepper and oregano. I made ½ cup of quinoa on the stove. I seasoned with 1/8 tsp. each of salt, seasoned salt, white pepper, black pepper, thyme, turmeric, oregano, ground mustard, onion powder, garlic powder and paprika. I then combined I bag of garlic herb cauliflower rice that I just steamed in the microwave to the quinoa as it finished cooking. I then added this mixture to the bowl of the chick peas. This was my base of the bowl. I added about 1 cup to each bowl (it made 3 lunch bowls). I then topped it with chopped red onions, cucumbers, tomatoes and feta. I wanted to serve it with some tzatziki sauce (which I didn’t have). So I tried to make my own LOL. I mixed Greek yogurt with some shredded cucumber, lemon juice, salt, pepper, garlic powder and dill. I felt like I couldn’t get the right taste, so I hoped letting it sit overnight it would get better and it did! I kept this own the side of the bowl until I was ready to eat them.
I was pretty upset at healthy me for packing this lunch. But was very pleasantly surprised how delicious it turned out. I mixed it all together and added the tzatziki with each bite. I would definitely make this again for lunches and may try to come up with other varieties or flavors! If you have ideas, comment below!
