Beer Cheese Dip

What goes better with a totcho bar than beer cheese dip? Other toppings yes, but a beer cheese really leveled it up!

Shout out to the Food Network app and Katie Lee Biegel for this recipe (only a few modifications).

In a sauce pan I melted 3 tbsp. butter and added 3 tbsp. flour. I then added about 4 cloves of garlic, chopped because more garlic is always better, always. Once it became fragrant, I slowly whisked in one beer (a German pilsner as that was on hand) and 1 tbsp. Dijon mustard. After it simmered for a bit and thickened, next was to slowly whisk in sharp white cheddar cheese (8oz. block, freshly grated). I decided it wasn’t enough cheese, so I added more shredded sharp white cheddar cheese. I then seasoned with some salt and black pepper. After allowing it to bubble and simmer for 5 or so minutes, I lowered the heat and added ¼ cup of heavy cream. I continued to let it simmer and thicken.

As mentioned, it was the perfect topping on tots. Pair with some green onions, crispy bacon and jalapeños! It also made for a great side dip!
