Deep Fried Fish

Well after a fail of use my deep fryer…I finally figured out that I had it put together wrong that’s why it wasn’t turning on LOL. But hey – now I know! I decided to do a quick deep fried red snapper.

I started by preheating the deep fryer to about 375. I prepped the red snapper by cutting slits in each side and adding salt and pepper. Then on a plate, I added flour, blackening seasoning, paprika and old bay seasoning and mixed it all together. I then dipped each fish in the flour mixture making sure all sides were coated.

Once the oil and fryer were heated completely I dropped the fish and cooked for about 10-12 minutes until they were golden brown. While the fish was deep fryer I sautéed down some cherry tomatoes with EVOO, salt, pepper, red pepper flakes, and garlic. As they cooked and became soft, I smashed them together to make a sauce. In a separate pan, I sautéed kale in EVOO, salt, pepper, garlic and some lemon zest. This only took few minutes to make.

When the fish was done, I removed from the fryer, let cool and lightly salted. Everything came together for a delicious dinner with rice, kale, deep fried fish topped with the tomato sauce! It is definitely a recipe to make again!
