Whipped Feta and Roasted Tomatoes

I love avocado toast with feta and feta on salads. But I wanted to try a whipped dip/spread. Honestly, it turned out so delicious! I feel like I will be doing this way more often.

I started first by roasting some tomatoes. I preheated the oven to 400. Chopped up tomatoes, garlic and some red onions. I tossed them with EVOO, salt, pepper, oregano and basil. I roasted them for about 35-40 minutes.

I started the whipped feta as my tomatoes were roasting. In my food processor I added about 8-10 oz. of feta crumbs, about 6-8 oz. of sour cream, ½ lemon juiced (about 2 tbsp.) and zested, salt, pepper, ¼ tsp. garlic powder and 3 tbsp. of EVOO. I blended everything until well combined. It was thick and creamy spread!

I toasted some Italian artisan bread spread the whipped feta and then topped it roasted tomatoes. It was 12/10 and I highly recommend! I even added some of it with my avocado toast the next morning and it completely leveled it up! It also dips well with chips, veggies and pretzels!
