Again, since I am getting lots of tomatoes from co-workers, new recipes are necessary. I decided to make my first tomato pie. I researched recipes on Pinterest and here is how it all came together!
First I preheated the oven to 375. Next I sliced my tomatoes and set them in a strainer to drain out excess water. I also salted them. I greased a pie pan and used pre-made pie crust and covered the dish. I took some melted butter and brushed the crust. I moved my sliced tomatoes to a paper towel lined plate to remove more excess water.
Then I started to alternate layers of sliced fresh mozzarella and tomato slices in the pie. I seasoned each layer with some salt, pepper, oregano and fresh basil. I continued this until the pie dish was filled. I ended with EVOO drizzle and topped with grated parmesan cheese. I baked the pie for about 45 minutes, until the top was golden and gooey!
Overall it turned out pretty delicious! I think I need to let my tomatoes drain longer as it turned out to be too liquidy and the crust stayed too soft. But I think I would definitely make it again! What is your favorite way to make tomato pie? Comment below so I can try your recipe next!
