Sometimes sandwiches and salads are boring or old for lunch options. So I am always looking for something new, quick and easy for lunches!
I came across this kit while shopping at Walmart so I thought I would give it a try. It came with a garlic-ginger paste, Korean BBQ sauce and sesame seeds for topping. You could use beef, pork or chicken. So I decided to give chicken a go! I had some chicken tenderloins in the freezer, and I took them out the night before to thaw out.

The directions on the back were super easy to follow. You only had to add the protein and vegetables. The directions suggestion onions and peppers, but I also added zucchini and broccoli. I chopped all the veggies and cut the tenderloins into quarter sized pieces. Then you coat the chicken with the garlic-ginger paste. Heat a pan with oil at medium-high and add the chicken to brown on all sides.






Once the chicken has started to cook and brown, add the vegetables. Continue to simmer for another few minutes. Then add the Korean BBQ sauce and stir until well combined. Turn down the heat and allow the stir fry to simmer an additional 5-10 minutes. Serve over rice๐ and top with sesame seeds. This was another quick and easy meal to prep. For a pre-mixed kit, I thought it turned out pretty good. It was delicious and filling. It became the perfect hot lunch on a rainy day. I think next time I would try it with another protein!

My go to lunch is a salad but I love all sandwiches. Salami cheese lettuce tomato and onions. I always need lettuce and tomatoes ๐
