Straight Bologna and Peppers

As my grandpa would call it “straight bologna and peppers,” is really the simplest of ingredients put together for a meal. But it’s the nostalgia feeling that comes along with eating it LOL. Here is my take on his classic!

I started by roasting some red peppers and tomatoes. I drizzled with EVOO and seasoned with salt, pepper, garlic, and Italian seasoning. While this was in the oven, I chopped up some bologna into slices and fried them in a pan until they were crispy and golden. After about 20 minutes in the oven, I took out the peppers and tomatoes and combined them in the pan with the bologna. I let it simmer together a bit more and it’s ready. I enjoyed it with some toasted butter bread one day and spaghetti another day. Like I said there’s not much to it but the comforting and happy feelings that come a long with it!
