Roasted Tomato Pasta Sauce

Since the golden cherry tomato plant was thriving this season, I decided to try a roasted tomato sauce!

First, I preheated the oven to 400. On a sheet pan I spread out all my tomatoes, chopped mini sweet peppers, shopped onion and whole garlic cloves. I added EVOO, salt, pepper, and some Italian seasoning and gave everything a toss until evenly coated. I roasted for about 25 minutes. I then dumped the pan in a blender with a splash of EVOO and water and blended until smooth. I did strain the sauce as the cherry tomato skins can be tough.

I decided to go with meat tortellini for the pasta choice. The sauce was a beautiful golden color and was very delicious! Straining the sauce was a bit more work than I wanted. But overall is was a great meal and fun when it’s tomatoes you grow!
