Steamed Clams

If you didn’t know I am slightly obsessed with Costco. I consider it therapy walking down all the isles and finding fun things. While waiting for the rotisserie chicken (IYKYK), I was standing next to the seafood cases. Sitting there was some fresh little neck clams that were just calling my name – so I had to get them. I decided to steam them, and they became the perfect treat to end the labor day weekend.

I started by giving them a good rinse and set up my mis en place. I chopped up some scallions and 5-6 cloves of garlic, juiced a lemon, pulled out a stick of butter and measured 1 cup white wine. In a pan on medium heat, I melt ½ stick butter and sauteed the scallion and garlic until fragrant. I then added the fresh squeezed lemon juice and wine bring that to a boil. I then added the clams and covered with a lid. I let them steam about 10 minutes.

I think I needed to use a bigger pot because I wasn’t thinking about them taking up more room when they popped open LOL. But they turned out perfectly. They had a fresh garlic flavor and ate so well with some crusty bread! I will now I have to keep my eye out for more fun seafood at Costco to see what other delicious foods we can make!
