Shout out to Casey for showing me how easy it is to make bruschetta lol. It is the perfect summer bite, specially when you have fresh tomatoes from local farms, like The Goat.
It is so easy to make. I took about 5 Roma tomatoes and diced them, removing as must of the seeds as possible. To the bowl I added minced garlic (measuring with my heart lol), salt pepper and chopped basil. Then I stirred in about 1 tbsp. EVOO and 1 tbsp. balsamic vinegar. I gave it a taste, adding salt as I see fit. I let that marinate a bit, while prepping some bread. I preheated the oven to 350. Sliced a French baguette, topping each slice with a drizzle of EVOO, minced garlic and fresh grated parmesan cheese. I toasted for about 5 minutes, until the bread was nice and crusty.
Then you top the toasty bread with a scoop of the tomato mixture and finish with a drizzle of balsamic glaze. You have the perfect summer bite! I had two kinds of balsamic glaze, one strawberry that was a bit sweeter and the other was a truffle glaze that was more savory. Both were delicious and I didn’t really have a preference. It was fun to alternate the flavors! This was a great way to use tomatoes, made a great snack or starter. But it gave me ideas of how else you can enjoy a bruschetta type bite – so stay tuned!
