Here is another recipe that I needed to use up the bananas I bought. This one may be my new favorite!
Started by preheating the oven to 350. I greased and lined with parchment paper my loaf pan. In a small bowl I mixed my dry ingredients: 1 cup flour, 1 cup cocoa powder, 2 tsp. baking powder, 1 tsp. baking soda and ½ tsp. salt. In a separate bowl, I mashed about 4-5 bananas. Then mixed in 4 eggs, ½ cup peanut butter, ½ cup brown sugar and some vanilla. I slowly incorporated the dry ingredients to the wet ingredients. Lastly, I folded in chocolate chips and added it to my loaf pan. (I had enough for one mini loaf pan as well). I baked for about 35-40 minutes. It ended up rising a lot, and I felt like it was still very gooey on the inside. I kept it in the oven for about 5-8 more minutes to ensure that the middle wasn’t too raw.



It turned out pretty good. I was worried it would be raw since my toothpick was very wet. But it was perfectly moist, not sweet but still rich. It paired perfectly with coffee. I think it would also pair perfectly with peanut butter ripple ice cream. I didn’t have any handy, but vanilla ice cream did work too! I think next time I may add more peanut butter or different flavor chips. Let me know if you have any suggestions?
