I attempted my dupe of an Amish hand pie. Taste was BOMB, but it was a bit more work than I wanted it to be LOL.
Preheat the oven to 425. Take a can apple pie filling (21oz.) and chopped the apples into smaller chunks. I added some more sugar and cinnamon and mixed it all together. Next, I took a box of pre-made pie crust (2 crusts) and I cut 4 inch circles (about 12-13 total). I prepped an egg wash with one egg and some water.

Then I spooned out the apple filling onto half of each circle. This is where it got messy LOL. Some of them had too much filling and were very gooey. Using the egg wash to help seal, I folded each circle in half and then crimped the edge with a fork for an added seal shut. Then I cut two slips on each pie and used the remaining egg wash to brush the tops of each pie. I baked for about 10 minutes and then bumped it to 450 for another 3-5 minutes to get them extra golden.

Overall, they were delicious, went perfect with coffee and even vanilla ice cream as a dessert! I think I should cut them into 5 inch circles to give a bit more room for filling. But it was also a bit more work then I had anticipate, so I a not sure I will make them again. Or if I do, then maybe a different kind of filling. We will have to see!
