A new cookie recipe when you have bananas that need to be used – this time using some of the Kodiak protein pancake mix.
- Preheat oven to 350.
- Smash 2-3 over ripped bananas
- Add about 2-3 tbsp melted butter and 1 cup brown sugar. Combined until smoothed and creamy.
- Add in 1 egg and vanilla; stir until combined.
- Combine in 1.5 cups Kodiak pancake mix
- Fold in 1 cups rolled oats and then espresso chips.
- Bake for about 9-10 minutes.
They were a protein packed cookie that pair perfect with coffee. They were a bit more dense of a cookie. But they were filling and a great grab and go breakfast. Kodiak has some other great recipes that I think I want to try in the future! Let me know if you have a favorite recipe I should try.
