We’re back with some easy breakfast prep options! I have seen a variation of different recipes for sausage breakfast bites. I was looking for some added protein bites to get the morning started off right. This recipe was quick, easy and pretty yummy. It wasn’t quite what I was looking for – so I may try another variation soon. But let’s get into how I prepped this batch!
First I preheated the oven to 350. Then I sprayed my mini muffin pan. In a bowl I added one pound ground pork sausage, 1 cup Kodiak pancake mix and 2 cups of shredded cheddar cheese. I seasoned with some salt, white pepper, black pepper and dried sage. I combined everything together with my hands so it was well blended. I divided this all into the mini muffin pan and baked for about 18-20minutes. They came out crispy little sausage bites. I also find them to be pretty filling as well.



So I think overall they turned out but I was just thinking they would be more of a sweet savory bite with the Kodiak mix – but it didn’t occur to me until after that I only used dry pancake mix LOL.I think next time I want to make them more of a pancake sausage bite, with sauté the ground pork first and added some milk to make it more pancake like. Then I hope to dip them into some maple syrup as well! That should help to create the sweet and savory bite!
