Cottage Cheese Queso

We are back – another cottage cheese recipe: cottage cheese queso.  And this recipe is here to stay!

I started by blending about 1 cup of cottage cheese smooth. I then added taco seasoning a tsp. or two. I didn’t have any on hand so in a small bowl I combined the following spices: chili powder, cumin, salt, pepper, paprika, garlic powder, onion powder, red pepper flakes and oregano. Once they were all combined I added the seasonings to the food processor and blended it with the cottage cheese. Added about 1 tbsp. nutritional yeast and blended again. Next, I transfered to a microwavable safe bowl and add shredded cheddar cheese. Again, we measure cheese with our heart. I microwaved in 30 second increments and stirred in between until I reached the right heat and smoothness. Again, the consistency wasn’t as smooth as I wanted, but the flavor was on point and it felt like queso. So it was a total win.

It is a bit addicting. I reheat in a small bowl with some extra cheese whenever I am in need of snack! Do you have any other cottage cheese recipes I should try – comment below!
