Meal Prep: Egg Bites

We are back with another breakfast prep – egg bites. Another one of the recipes/ideas that came together to use up some produce and eggs.

First I preheated the oven to 350. I had some roasted sweet potatoes, tomatoes, red onions, peppers and mushrooms to chop up finely. I then chopped up some frozen sausage links and cooked bacon. One batch had sausage and the other had bacon. In my large Pyrex measuring cup I beat 6 eggs, added half the chopped veggies and the sausage links. I then added some shredded cheddar and shredded mozzarella cheese. Once all combined, I poured them into my grease mini muffin tin. This batch made 24 egg bites and then baked about 16 minutes or until golden brown. They easily popped out of the muffin tin and I placed the on a cooling rack to cool completely.  I then repeated these same steps with the rest of the veggies and the chopped bacon. Again this made 24 egg bites.

I allowed them to cool completely on the cooling rack. I kept some in the fridge for the week. The rest I wrapped 4 bites in a wet paper towel and then in foil. I placed them in a Ziploc bag and took the out when I needed a quick grab and go breakfast. I removed them from the foil and reheated them with the wet paper towel in the microwave for about 30 seconds to a minute.

They are the perfect bite and easy warm breakfast on mornings I am not quite functioning. It does have me thinking of other combination or using the large muffin tin for bigger bites. I am even thinking of doing pancake batter with sausage or ham or bacon!?
