PB Berry Oat Cookies

Overripe bananas happens way more often than I would like. I always tell myself yes, buy bananas and I will eat them. Then I always end up freezing some for smoothies or making something quick, easy and delicious because they are overripe – so this time I made these berry cookies that turned out so good now I just want to buy bananas so I can make them again LOL.

Here is all you need: 2-3 ripe bananas, 2  cups rolled oats, chopped berries, ½ cup nut butter and chocolate chips.

Start by preheating the oven to 350 and line a baking sheet with parchment paper. I started by mashing my bananas in a bowl, then I added peanut butter and mixed until combined. I folded in the rolled oats, added a little bit at a time. I had strawberries and blueberries, so I chopped the strawberries and folded both berries in the mixture. Lastly, I added the dark chocolate chips. I scooped them into blobs and placed them on the baking sheet. They baked for about 12 minutes or until golden brown. They were the perfect morning bite and a bit guilt free as I didn’t add sugar. They went well with coffee and were a good refuel after the gym. I am now thinking what other berry or fruit combinations can I do next time. Let me know if you have any suggestion below!
