Roasted Veggie Pasta Sauce

When you’re in the mood to make pasta, but you also need to use up produce before it goes bad … you blend it in the sauce. I call it the sneaky “healthy” but without the veggie chunks LOL.

I already has some roasted red peppers. On a sheet pan, I roasted some zucchini, red onions, mushrooms, tomatoes and garlic gloves. Once all was roasted I added to a blender with the roasted red peppers, fresh basil, shredded parmesan and some EVOO. I blended it until smooth, and added some salt and pepper to taste.

I had some raviolis in the freezer that needed to be eaten and I had an easy (and semi healthy) meal prep lunch for the week!
