Another recipe of when you have too many ripe bananas and don’t know what to make. I wanted cookies this time around. To make them “healthier” (in my mind that is LOL) I went with an oatmeal chocolate chip recipe.
Here is what you need: 1 ½ cup flour (sifted), 1 tsp. baking powder, 1tsp. baking soda, ½ tsp. cinnamon, ½ tsp. salt, 2-3 bananas (mashed),1 egg, 2 tbsp. oil, ¾ cup brown sugar, ¼ cup sugar, 1 tsp. vanilla, 1 ¾ cup rolled oats and 1 cup chocolate chips.
Preheat the oven to 350 and line a baking sheet with parchment paper. In a large bowl, combine flour, baking powder, baking soda, cinnamon and salt. In a separate bowl, mash the bananas and add the egg, oil, brown sugar and sugar. Once combined pout into the dry ingredients and mix together. Lastly fold in the oats and chocolate chips. My batter was a bit wet, so I added a bit more oats and then popped the bowl in refrigerator to help it harder a bit so they did not spread out too much. Bake for about 12 minutes until the sides turn golden brown. They turned out a bit thick and fluffy, but still very delicious.
