Moroccan Roasted Potatoes

It’s grilling season… well was when this recipe was made! I needed a side to go with Moroccan seasoned pork chops and grilled mushrooms. What better option than a Moroccan roasted potato.

First, I preheated the oven to 450. I chopped 4 rustic potatoes into about 1-inch pieces. I covered with EVOO, salt pepper, cumin, turmeric, cayenne. Paprika and garlic powder. I went lite on the turmeric as it can be powerful and I just wanted a dash for some color. I tossed the potato to make sure they were evenly coated and put them on my copper pan. I roasted them about 25 minutes. I immediately placed them in a stainless steel bowl to keep warm and then covered and tossed them with some grated parmesan. I needed to add my own twist lol.

They were the perfect side dish for the grilled pork chops and mushrooms. I also added some sauteed green beans. A delicious meal to end the weekend! Stay tuned to more grilled recipes.
