I find myself back in the game of catch up on the recipes and places I have eaten lol. We’re picking up the slack with more peaches from The Goat! This time around I decided to do a quick, easy cobbler using bisquick!
It was easy to put together and tasted pretty good (warmed and top with ice cream of course). First, preheat the oven to 350. Next, I peeled and sliced about 4-5 peaches. You want about 2 cups in total. I tossed them in ½ cup brown sugar, ½ cup sugar and 2 tbsp. corn starch. I set the aside and started on the cobbler base. In another bowl, I mixed 1 2/3 cup bisquick mix, 1 cup milk, 1 tsp. cinnamon, and splash of vanilla. Once combined, I added ½ cup melted butter and poured into a greased 9×9 baking pan. I then topped with the peach mixture. Ideally the batter is to rise over/around the peaches, but I may have had too many LOL. You bake for about 50 minutes and then enjoy warm with ice cream! Overall taste was delicious. It helps the peaches are so fresh. It wasn’t as sweet as I hoped, but I think that’s more of the case with a cheat of bisquick. Next time I may try another recipe using yellow cake mix and see how that turns out!
