I was looking for a fun summer treat with a red white and blue theme. After researching and compiling ideas – I came up with this layered treat!
First, I started with baking the puff pastry. I learned my lesson last time with the Danishes and I made sure to not let them defrost too much. I took two sheets and cut them into 6 pieces and baked for about 12-15 minutes in a 400-degree oven, until they were golden brown. While they were baking, I made a box of instant cheesecake pudding. I let the sit in the fridge to chill. I removed the puff pastry and allowed it to cool completely. Once the puff pastry was removed I folded in 1 8oz. tub of cool whip to the pudding mixture and returned to the fridge to chill. The pudding mixture did not get quite as thick as I hoped, but we made it work.
I layered puff pastry, pudding, fresh blueberries and strawberries, and then another puff pastry. It was a perfect summer treat and festive as well. I think maybe next time, use a cookie cutter and maybe layer them in jars so they keep their shape – let me know if you have suggestions below!
