Sour Cream and Chive Dip

Getting in the fresh herb game, but then not realizing how to use chives. Toppings are great, but I wanted to make it the star LOL. So, a chive dip was in store and looking in the fridge – a sour cream and chive dip came together.

To a bowl, I added 2 parts sour cream and 1 part mayo. Then I added some minced garlic, salt, pepper, splash of lemon juice and finely chopped chives. I mixed until well combined; gave a taste and seasoned accordingly. It was a light, yet creamy dip. It went well with crackers and veggies. But my favorite was potatoes: tots, French fries and plopped right on top some roasted potatoes. I think the options are endless.

This turned out better than I expected, I may be keeping it on repeat. But I still have chives – so if you have a favorite way to use them, comment below!
