We can’t always share the good recipes. We need to share the oops so you know what not to do and try yourself! Hence the “muffin-ish.” It was time to use up bananas. I couldn’t find a recipe to use as a guide that I liked so we made up our own. I’m pretty sure I will not make these again or at least the same way – but here it is.
First preheated the oven to 375 and lined/sprayed my muffin pan. I utilized the blender this recipe to mix and combined my batter, which was very easy. But also think was my downfall LOL. To the blender I added 3 over ripe bananas and about ½ cup of Greek yogurt. I mixed until well combined and then added 1 stick soften butter, about ¼ cup honey, 2 eggs and vanilla. Again, blending until combined. Next, I added about 1 ½ cups rolled oats, cinnamon and 1 tsp. baking soda. I think this is where I went wrong. The batter was too liquidy. I should have added more oats and folded them in and not add/blend them. But it was too late, so we poured the batter and baked for about 25-30 minutes. Because they were more liquidy than I wanted, they took longer to bake. They weren’t quite the consistency I was looking for/not much like muffins. Flavor wise they weren’t awful just not awesome LOL. I will say they were great warm with a scoop of vanilla ice cream. We’ll see what happens next time I have bananas to use!
