When you need an Easter dessert/treat and you have lemon and blueberries that need to be used – you get these yummy lemon blueberry squares. They make the perfect dessert or treat with coffee.
First, preheat the oven to 350 and spray a square/brownie pan with nonstick. In one bowl whisk together ¾ cup flour and a dash of salt. In bowl with a hand mixer combine 1 stick butter (softened), ¾ cup sugar and lemon zest until mixed well and fluffy. I should have used the stand mixer, because the hand mixer got messy and tiring to hold LOL. Then add 2 eggs (1 at a time) and about 1-2 tbsp. lemon juice and continue to mixer and combine. Slowly add the flour mixture and mix until smooth. Lastly, fold in about ¾ cup of fresh blueberries. Add all to the sprayed pan and bake for about 20-25 minutes (until you have a clean toothpick).
I had intentions of topping them with a lemon glaze but didn’t have powdered sugar. I think it would have been a fun add, but not needed! I love this lemon blueberry combination, so if you have other recipes I should try – comment below!
