A summer staple in my family was always macaroni salad. It was always one of my favorites that I would request my grandma to make me. For the 4th July weekend I decided to make it myself for the first time – I must say it was pretty good and close as I could get to the family recipe.
It was easy to put together. I got a pot of water for about 1 cup macaroni ready to cooked as well as a couple hard boil eggs. During that I chopped red onion, celery and carrots. When the eggs were done, I chopped those as well. I added everything to a bowl and it was time for the dressing. All eye ball measurements and off of taste, but I mixed mayo, mustard, red wine vinegar, salt and pepper. I didn’t add all the dressing. Just enough to coat and combine all ingredients. I allowed it to sit over-night and added the remaining dressing right before serving.



It was a bit on the salty side, but overall I think it came together and turned out as close to grandma’s as I could get LOL. It was the perfect side dish to all the grilled items! How do you like to make macaroni salad; is it a recipe worth trying? Comment below!
