Banana Coffee Cake

Here we are, back to my baking self. I had ripe bananas that I needed to use and I wanted something different than the muffins and cookies I have made before. I thought I would mix it up and I tried a Banana coffee cake. As I said before, I am not a great baker, so desserts or pastries I rather buy/have someone else make fore me LOL. Start by preheating the oven to 350. I used parchment paper/cooking spray and flour to prep my loaf pans (1 large and 2 mini loaf pans). I did not use parchment paper in my large pan … note to self to use that next time LOL. In a small mixing bowl, I mashed 3 bananas, 2 tbsp. brown sugar, 1 ½ tsp. vanilla and ¾ tsp. cinnamon. In a larger bowl I creamed ½ cup butter, soften, with 1 cup of sugar. I then added 2 eggs.

Next, I added and sifted 2 cups flour, 1 tsp baking soda and ¼ tsp. salt. I combined together and added 2 tbsp. sour cream and mixed again. Lastly I added the mashed banana mixture. I added the batter into the loaf pans. In a small bowl, I prepped the crumb topping. I combined 1 tsp. cinnamon, 1 cup flour, 1 cup brown sugar and 6tbsp. of butter. Once combined into a crumb topping I added it on top of the batter in all loaf pans. I baked for about 40-45 min. I allowed it to cool in the pans before removing them, but of course I had to give it a sample while it was still warm. A 8/10 over all! So delicious!
